pH is a measure of acidity and alkalinity. The scale runs from 0 (highly acidic) to 14 (highly alkaline), with 7 being neutral. The blood must remain within a very narrow range — slightly alkaline, between 7.35 and 7.45 — for the body to function properly.
The body has sophisticated mechanisms, such as homeostasis, for keeping blood pH stable. But maintaining that stability comes at a cost. When the body is consistently overwhelmed by acid-producing influences — poor diet, chronic stress, toxic load, lack of sleep, insufficient movement — it draws on its own mineral reserves to neutralize the excess acid. Over time, this depletion has consequences of its own.

The typical North American diet — high in processed foods, refined carbohydrates, sugar, and animal proteins, and low in vegetables, minerals, and fibre — creates a sustained acid load that the body was not designed to manage indefinitely.
